Stir Fried Udon Noodles

Quick. Healthy. Yumm! What you need? A handful of ingredients already there in your pantry.

Method

  1. Boil noodles al dente as per the instructions on the pack. Run them under cold water and set aside.
  2. Blend together all the sauces in a small bowl along with vinegar and sugar. Keep it aside.
  3. In a wok, swirl around some oil and saute garlic, galangal and shallots for a minute.
  4. Stir in your choicest veggies and fold in half of the sauce mixture.
  5. Stir-fry veggies until you are satisfied with the softness, crispiness and texture.
  6. Mix in rest of the sauce, saute for 1-2 minutes and serve with a garnish of basil or cilantro.

 

Did you notice, we have used Thai Dragon Fish Sauce in the dish?

Feel free to choose any other Sriracha sauce along with it.

  • 2 tbspThai Dragon Fish Sauce
  • 1 tbsp Thai Dragon Soy Sauce
  • 4 ounces udon noodles
  • 1 tsp galangal (grated)
  • garlic cloves (chopped)
  • 70g veggies (mushrooms, bell peppers, carrot, shallots, etc.)
  • 1 tsp Paprika
  • 1 tsp White Pepper
  • 2 tbsp Vinegar
  • ½ tsp sugar
  • Oil (for stir-frying)
  • Basil or Cilantro (for garnishing)
